Mercasa: Bringing The Taste of Home to Brantford
For Tom Mercante, food has always been about more than what is on the plate. It is about family, tradition, hospitality and bringing people together.
As the founder, owner and Executive Chef of Mercasa Little Italy Eatery & Catering in Brantford, Ontario, Tom has turned that belief into a business that continues to grow while staying firmly rooted in the values that inspired it.
Mercasa is an Italian eatery, bakery and full-service catering company offering everything from Roman-style pizza and fresh pasta to its signature eight-layer lasagna, chicken cutlets, arancini, antipasto boards and house-made desserts. The business also caters weddings, corporate functions, family celebrations, community events and gatherings of hundreds of people.
But the story behind Mercasa goes much deeper than its menu.
The name Mercasa is a combination of Tom’s family name, Mercante, and the Italian word casa, meaning home.
That meaning is at the heart of the business.
Tom’s family comes from Anagni, in the province of Frosinone, Italy, and his Italian heritage has played a major role in shaping both his love of food and his approach to hospitality.
Growing up, food was a way for his family to celebrate, welcome others, preserve traditions and bring generations together. Some of Tom’s most meaningful memories involve a table filled with family, conversation and homemade Italian food.
When he created Mercasa, he wanted to recreate that feeling.
The goal was simple: to give people the opportunity to experience the warmth, generosity and flavours of an Italian home, even when they were away from their own.
Tom’s path to restaurant ownership was not a conventional one.
Before Mercasa, he spent approximately 22 years working as an educator. Teaching was an important chapter of his life, and many of the skills he developed during those years continue to influence how he operates his business today.
Leadership, patience, organization and helping people build confidence are all skills that translate surprisingly well into entrepreneurship.
Tom is also a Red Seal Chef, and cooking has always remained one of his greatest passions.
In 2015, that passion began taking a more entrepreneurial shape when the Mercasa catering business was launched.
What started on a smaller scale gradually grew through word of mouth. More people experienced the food, recommended Mercasa to friends and family, and began trusting the business with their own celebrations and events.
That support demonstrated that there was an opportunity to build something bigger.
In 2018, Mercasa Little Italy Eatery officially opened its doors in Brantford.
For Tom, opening the restaurant wasn’t about finding an easier career. It was about building something meaningful.
He wanted to create a business that represented his heritage, gave him an opportunity to express himself through food and allowed him to serve his community in a completely different way.
Starting a restaurant is a major leap of faith under any circumstances.
For Tom, that leap was supported by his wife, Jennifer, and their sons, Luca and Aleo.
Family has remained an important part of the Mercasa story from the beginning.
Tom describes Mercasa as a family business in every sense of the word. Building something his family can be proud of—and hopefully leaving something meaningful for the next generation—is a major part of what motivates him.
That philosophy is reflected in the name itself.
Mercasa isn’t simply a restaurant. It is meant to feel like home.
Walk into Mercasa and there is plenty to choose from, but one thing remains consistent: an emphasis on doing things properly.
The restaurant’s Roman-style pizza is one example.
The dough is fermented for 72 hours, allowing flavour and texture to develop before it reaches the customer.
The menu also features fresh pasta, lasagna, chicken cutlets, arancini, antipasto and house-made desserts, along with many of the Italian dishes Tom grew up enjoying.
That connection to tradition doesn’t mean standing still.
Mercasa has continued to develop its catering operation alongside the restaurant, serving everything from intimate family gatherings to major events with hundreds of guests.
Today, the catering division serves weddings, private celebrations, university functions, corporate events and community gatherings throughout Brantford and the surrounding region.
Mercasa is also proud to be a preferred caterer at numerous local venues and the exclusive caterer at the Walter Gretzky Municipal Golf Course.
For Tom, those relationships are about more than business. They are opportunities to work alongside other local organizations and help create memorable experiences for people.
Running a restaurant can look very different from the outside.
Customers see the finished plate, the welcoming atmosphere and the celebration happening around them.
Behind the scenes, there are staffing decisions, finances, equipment problems, suppliers, marketing, maintenance, customer service and countless unexpected challenges.
Tom has experienced his share.
Mercasa opened shortly before the COVID-19 pandemic, forcing the business to adapt quickly during one of the most uncertain periods the restaurant industry had ever experienced.
More recently, vandalism involving the restaurant’s rooftop HVAC equipment caused significant damage, extreme temperatures inside the restaurant and an extended closure.
Situations like these can test a business financially and emotionally.
But they can also reveal something important: the strength of a team and the loyalty of a community.
For Tom, each challenge has reinforced the importance of resilience, adaptability and staying committed to the reason the business was created in the first place.
One of the most rewarding parts of the Mercasa journey has been watching its catering division grow.
When a family chooses Mercasa to cater a wedding, celebration or other important occasion, they are putting their trust in the business to become part of a meaningful day in their lives.
That responsibility is not lost on Tom.
Whether Mercasa is preparing food for a small family gathering or serving hundreds of guests at a major event, the goal remains the same: provide quality food and genuine hospitality.
Building the team has also been an important part of the journey.
A successful restaurant is never the work of one person. It takes chefs, bakers, pizza makers, servers and catering staff who care about the experience they are creating.
As someone who spent more than two decades as an educator, Tom particularly enjoys teaching younger employees and helping them develop skills, confidence and pride in their work.
For Tom, being a local business owner comes with a responsibility to contribute to the community that supports the business.
Mercasa proudly supports numerous local charities, foundations, amateur and professional sports organizations and community initiatives.
The business has developed partnerships with organizations including the Brantford Bulldogs and Brantford Titans, while supporting many other local teams and causes along the way.
Tom believes a local business should do more than simply operate within its community.
It should actively contribute to it.
Supporting charities, young athletes, community programs and local events is one of the ways Mercasa expresses its gratitude to the people who have supported the business.
At its heart, Mercasa is about bringing people together.
